The lentil plant (Lens Culinaris) originates from Asia and North Africa and is one of our oldest sources of food. Lentils are a rich source of calcium, iron and B vitamins and are an essential staple food for many across the world. Green lentils are also known as ‘Puy’ lentils, as they are commonly grown in the French region of ‘Le Puy’.

To cook green lentils, boil in a pot of salted water for 25-30 minutes.
