Semolina is the ccoarse, purified white middlings of durum wheat, which is mainly produced in the Middle East is traditionallly used in making couscous, pasta, upma, and sweet puddings.

Spelt semolina is made from whole spelt grains, it offers a low-gluten alternative to durum wheat semolina. It is an ‘ancient grain’ and full of vitamins and minerals, and be used the same as you would wheat semolina!
