Bob’s Red Mill Vital Wheat Gluten Flour is made from the protein found in the endosperm of the wheat berry. This contains approximately 75% to 80% protein. When water is added to this flour, it becomes very elastic. It is often used in yeast bread recipes as it helps to improve the texture and elasticity of the dough. By adding just 1 tablespoon per cup of flour to your recipe, texture, elasticity and volume can be improved greatly. This flour is also often used for meat and meat substitutes as it helps bind the ingredients together.
